If i take the carrier out, of course gotta mark the caps but if the gears and carrier bearings looks good, can it go right back in? or do you have to shim it all over again?
Or can i use new shims that are the same size and just replace those?

If they are in good shape you could just put them back in, if you aren't changing the gear ratio.
But looking at the pics of the axle, I would replace everything while you have it apart.

No shims or anything, just mark your caps and pull it out. Then put it in and tourque the caps down.
A good tip for pulling the carrier is to take a rag and ball it up and stuff it behind the ring gear then turn turn a ring gear bolt. As the rag gets pulled in behind the ring gear it'll push out and pop the carrier out.
